Macaroon Kisses

Macaroons are one of those cookies that have a following. People either love coconut or they don’t. I just happen to enjoy the sweet fruity taste of raw coconut or the nuttiness of toasted. This version of a macaroon combines chocolate, which we all love! And coconut!




Ingredients:

14 oz sweetened shredded coconut
¼ cup AP flour
¼ cup sugar
¼ light corn syrup
¼ cup cream of coconut*
3 egg whites
2 Tablespoons butter (melted)
1 teaspoon vanilla extract
Pinch of salt
32 chocolate kiss candies


Process:

In a food processor, blitz half of the shredded coconut- this will create a better consistence for mixing.



Add the remaining ingredients to the coconut except the chocolate kisses.



Get your hands in there and incorporate all the ingredients.



Cover the mixture and refrigerate for a few hours.
Once mixture is chilled, measure out a tablespoon and roll between hands to make a ball.


Lightly press the chocolate kiss into the center and wrap mixture around kiss.


Make sure chocolate is fully covered.
Place on baking sheet and bake at 350 degrees for about 15- 18 mins.



Decorating the finished product is up to you…get creative! Dust with cocoa, drizzle with dark chocolate or creamy white chocolate.
